I hope you all managed to find a moment of rest and relaxation during the final weeks of the year. Much like the wise wizard Gandalf in Peter Jackson’s adaptation of “The Two Towers,” I felt as though I had strayed beyond thought and time. The stars danced above, and each day felt as long as a lifetime in the age of the earth. (Yes, I may have indulged in a rewatch of the “Lord of the Rings” trilogy over the holiday break.)
But here we are, on the other side of January 1st, ready to face reality once again. After weeks of festive feasting, I found myself in need of a reset. Therefore, I embarked on a delightful mini-tour of vegetarian and vegan soups that are both satisfying and nourishing—perfect for the impending cold front.
Ramen Season is in Full Swing
When temperatures drop, nothing warms the soul quite like a steaming bowl of noodles and broth. The city offers a plethora of ramen options, but I finally made my way to Ippudo V in Dumbo, the all-vegan offshoot of the beloved Ippudo ramen chain. This spot had been on my “must-visit” list ever since it opened its doors this summer—though admittedly, it may not have been the ideal time for ramen cravings.
Let me assure you, the absence of meat is hardly felt. I found myself exclaiming, “I don’t miss the meat!” as I savored Ippudo’s take on a rich tonkotsu ramen, adorned with crispy enoki mushrooms and generously laden with thick, chewy noodles. The secret to this delectable dish lies in the abundant use of oils—both avocado oil and a mysterious “housemade flavored oil”—along with a hearty splash of soy sauce that brings everything together. The best part? The somewhat unassuming location means you can easily walk in and snag a table without a long wait. I am already eager to return at the earliest opportunity!
